Makes 12-15 Cookies

Ingredients:

1 Cup Organic Creamy Almond Butter

1/3 Cup Coconut Sugar

1 Organic egg

1 Tsp. High quality Vanilla extract such as Bourbon

1 Tsp. Baking Soda

1/2 cup Dark Chocolate chunks (Preferably Organic fair trade)

Optional* 1/4 Cup Chopped raw (or toasted) almonds

Directions:

Preheat oven to 350 Degrees

Line a baking sheet with parchment paper.

In a large bowl, mix together the almond butter, egg, vanilla, baking soda and coconut sugar until well combined. Fold in the dark chocolate chunks with a spatula or large spoon.

measure out spoon sized balls about 1 inch apart. Bake for 9-12 min. Watch closely. They will appear to be undercooked but they’re not. Top with a little sprinkle of the chopped almonds if desired for extra crunch. Let the cookies cool completely.
